Preparation
Make the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let it cool.
Prepare the Filling
In a large bowl, whisk together the key lime juice, sweetened condensed milk, eggs, and lime zest until smooth and well combined.
Fill the Crust
Pour the filling into the cooled graham cracker crust. Spread it evenly.
Bake the Pie
Bake in the preheated oven for 15-20 minutes, or until the filling is set. It should not jiggle in the center.
Cool the Pie
Remove from the oven and let the pie cool at room temperature for about 1 hour. Then refrigerate for at least 3 hours before serving.
