Prepare the Beans

Rinse and soak the red beans overnight in water. Drain and set aside.

Cook the Sausage

In a large pot, slice the andouille sausage and cook over medium heat until browned. Remove and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft.

Combine Ingredients

Add the soaked red beans, cooked sausage, bay leaves, thyme, cayenne pepper, paprika, and vegetable broth to the pot. Stir well.

Simmer

Bring to a boil, then reduce heat and let simmer for about 1.5 hours, or until the beans are tender. Stir occasionally and add more broth or water if necessary.

Cook the Rice

In a separate pot, cook rice according to package instructions.

Season

Once the beans are cooked, remove bay leaves and season with salt and black pepper to taste.

Serve

Serve the creamy red beans over rice and garnish with chopped green onions. Optionally, serve with grilled andouille sausage on the side.
