Method
Fish & Marinade
- 1
Prepare fish
Pat the fish fillets dry with paper towels. Cut into bite-sized pieces, about 1.5–2 inches each.
- 2
Place the fish pieces in a bowl. Add 1 tsp salt, 1/2 tsp black pepper, 1 tbsp lemon juice, 1 tsp ginger-garlic paste and 1/4 tsp turmeric. Toss gently to coat. Marinate for 15–20 minutes in the refrigerator (do not over-marinate or the fish will become mushy).
Batter
- 3
In a mixing bowl, sift or whisk together 1 cup gram flour, 1/4 cup rice flour, 2 tbsp cornstarch, 1/2 tsp baking powder, 1/2 tsp crushed ajwain (or cumin), 1/2 tsp red chili powder, 1/4 tsp garam masala and 3/4 tsp salt until evenly combined.
- 4
Gradually add 3/4 cup cold water while whisking to form a smooth, thick batter — it should coat the back of a spoon. Adjust with another tablespoon of water if too thick; batter should be thick enough to cling to fish but still pour slowly.
- 5
For a lighter, airier fritter, rest the batter for 5–10 minutes. Just before frying, whisk briefly to re-incorporate any settled flour and to reactivate the baking powder.
Optional coating (for extra crunch)
- 6
If using panko or semolina: spread it on a shallow plate. After dipping the marinated fish in the batter, press each piece lightly into the panko/semolina to coat evenly for an extra crunchy exterior.
Frying & Garnish
- 7
Heat about 2 cups of neutral oil in a deep, heavy-bottomed pan or wok to 350–360°F (175–180°C). If you don't have a thermometer, test by dropping a small dollop of batter — it should sizzle and rise to the surface steadily without browning immediately.
- 8
- 9
Fry for 3–4 minutes per batch, turning as needed, until golden brown and cooked through. Internal fish temperature should reach 145°F (63°C) or the fish should flake easily. Adjust heat as necessary to maintain oil temperature.
- 10
Use a slotted spoon to transfer pakoras to a paper towel–lined tray to drain excess oil. Keep fried batches warm in a low oven (200°F / 95°C) while you finish remaining pieces.
- 11
Arrange fish pakoras on a serving platter. Garnish with chopped cilantro and lemon wedges. Serve immediately with mint chutney or tamarind chutney for dipping.
Serving
- 12
Serve 3–4 pakoras per person as an appetizer. Provide extra lemon wedges and chutney on the side.
