Method

Dough

  1. 1

    Make and Rest Dough

In a large mixing bowl, combine 2 cups whole wheat flour and 1 tsp salt. Add 1 tablespoon oil. Gradually add about 3 tablespoons water and begin to mix into a shaggy dough. Add more water, a teaspoon at a time, until a soft, pliable dough forms (should be slightly firmer than chapati dough). Knead for 5–6 minutes until smooth. Cover with a damp cloth and let rest for 20–30 minutes.

Potato Filling

  1. 2

    Cook Potatoes

Place peeled potatoes in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Reduce heat and simmer 15–20 minutes until tender when pierced with a fork. Drain thoroughly and let steam-dry for 2–3 minutes.

  2. 3

    Prepare Spiced Mash

While potatoes are hot, mash them until smooth with a potato masher or fork. In a small skillet, heat 2 tablespoons oil or ghee over medium heat. Add 1 tsp cumin seeds and let them sizzle 10–15 seconds. Add 1 finely chopped green chili, 1 tsp grated ginger and optional 1/4 cup chopped onion; sauté until onion is soft and translucent (2–3 minutes). Transfer the spiced onion mixture into the mashed potatoes. Add 2 tablespoons chopped cilantro, 1/2 tsp amchur (or 1/2 tsp lemon juice), 1/2 tsp garam masala, 1/4 tsp red chili powder, 1 tsp salt and optional 1/4 tsp roasted cumin powder. Mix thoroughly and taste; adjust salt or lemon. Let the mixture cool to near room temperature so it’s easy to stuff.

  3. 4

    Portion Filling

Divide the potato mixture into 8 equal portions (about 2–3 tablespoons each). Roll each portion into a loose ball and set aside on a plate.

Shaping & Cooking Parathas

  1. 5

    Divide Dough

After resting, divide the dough into 8 equal balls (about 35–40 g each). Roll each dough ball between your palms to smooth.

  2. 6

    Roll and Stuff

Lightly dust your work surface with extra flour. Take one dough ball and roll into a small disc about 4 inches (10 cm) across. Place one potato filling ball in the center. Bring the edges of the dough up over the filling and pinch to seal completely, ensuring no gaps. Gently flatten the sealed ball and dust with a little flour. Using a rolling pin, roll the stuffed ball carefully into a 6–7 inch (15–18 cm) flatbread, rolling gently so filling doesn't burst; if filling breaks through, pinch and reseal then continue rolling.

  3. 7

    Griddle the Parathas

Heat a heavy skillet or tawa over medium-high heat until hot. Place the rolled paratha on the hot skillet. Cook 30–45 seconds until small bubbles appear, then flip. Add about 1/2 teaspoon ghee or oil on the cooked side; press gently with a spatula and cook another 30–45 seconds. Flip again, add another 1/2 teaspoon ghee or oil, and cook while pressing lightly so the paratha browns in spots and becomes crisp, about 30–60 seconds. Adjust heat so the paratha cooks through without burning. Repeat with remaining dough and filling, using about 1/2–1 tsp ghee/oil per paratha as needed.

  4. 8

    Keep Warm

Stack cooked parathas on a plate and keep covered with a clean kitchen towel to stay warm and soft until serving.

To Serve

  1. 9

Serve hot with plain yogurt or raita, and pickles or chutney alongside. Enjoy with a cup of chai.
