Yuca Fritters

Method

Instructions

  1. 1

    Prepare the Yuca

Peel and cut the yuca into chunks. Boil in salted water for about 20-25 minutes, or until tender. Drain and let cool slightly.

  2. 2

    Mash and Mix

Once cool enough to handle, mash the yuca in a bowl until smooth. Stir in the Japanese curry powder, chopped scallions, salt, and black pepper. Mix well.

  3. 3

    Form Fritters

Shape the yuca mixture into small patties or fritters, about 2 inches in diameter.

  4. 4

    Prepare for Frying

Dip each fritter into the beaten egg, then coat with panko breadcrumbs, pressing gently to adhere.

  5. 5

    Fry the Fritters

In a deep skillet or pot, heat the oil over medium-high heat. Fry the fritters in batches for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.

  6. 6

    Serve

Top each fritter with a spoonful of spicy tuna and garnish with serrano pepper slices. Serve immediately.
