    Prepare the Flank Steak

    Slice the flank steak against the grain into thin strips. Season with salt and black pepper.

    Heat the Oil

    In a large skillet or wok, heat the olive oil over medium-high heat.

    Stir-Fry the Steak

    Add the sliced flank steak to the skillet and stir-fry for about 3-4 minutes until browned. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the minced garlic, onion, and bell pepper. Stir-fry for about 2-3 minutes until the vegetables are slightly tender.

    Add Tomatoes and Steak

    Add the diced tomatoes and the cooked flank steak back into the skillet. Pour in the soy sauce and stir everything together. Cook for an additional 3-4 minutes until heated through.

    Finish with Cilantro

    Remove from heat and stir in the chopped cilantro. Serve hot over rice or noodles.
