Prepare the Broth
In a large pot, bring the chicken or vegetable broth to a boil.

Add Aromatics
Add the lemongrass, galangal or ginger, and bird's eye chili to the boiling broth. Let it simmer for 5 minutes to infuse the flavors.

Cook the Protein
Add the chicken or shrimp to the pot and cook until they are fully cooked (about 5-7 minutes for chicken, 2-3 minutes for shrimp).

Add Vegetables
Stir in the tomatoes, bamboo shoots, bean sprouts, and sliced onion. Cook for an additional 3-5 minutes until the vegetables are tender.

Finish the Soup
Remove from heat and stir in the lime juice and chopped cilantro. Adjust seasoning with salt or additional lime juice to taste.
