Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Breading
In a large bowl, combine all-purpose flour, cornstarch, salt, and chili powder.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

Heat the Oil
In a deep pan or fryer, heat vegetable oil to 180°C (350°F).

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Toss with Seasonings
In a large bowl, toss the fried calamari with sliced onion, chopped scallions, minced garlic, and chili powder to taste.

Serve
Serve the Thai calamari hot with sweet Thai chili sauce on the side for dipping.
