    Prepare the Rice

    Rinse the sushi rice under cold water until the water runs clear. Drain and add to a pot with 2.5 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 20 minutes, then remove from heat and let it sit for another 10 minutes.

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.

    Prepare Fillings

    Slice the fresh fish, avocado, and cucumber into thin strips.

    Roll the Sushi

    Place a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice over the nori, leaving the top edge empty. Lay down slices of fish, avocado, and cucumber in the center. Using the mat, roll the sushi tightly from the bottom up. Seal the edge with a little water.
