Prepare the Vegetables
Slice the bell peppers into thin strips and set aside. Drain and rinse the bamboo shoots.

Cook the Curry
In a large pan or wok, heat the vegetable oil over medium heat. Add the red curry paste and sauté for 1-2 minutes until fragrant.

Add Coconut Milk
Pour in the coconut milk and stir well to combine with the curry paste. Bring to a simmer.

Add Vegetables
Add the sliced bell peppers and bamboo shoots to the curry. Stir and cook for about 5-7 minutes until the vegetables are tender.

Season the Curry
Stir in the soy sauce, sugar, and salt to taste. Adjust the seasoning as necessary.

Finish with Basil
Remove from heat and stir in the fresh basil leaves. Serve hot.
