Braiding the Pork Belly
In a large pot, combine pork belly, soy sauce, brown sugar, water, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours until tender.

Preparing the Shiitake Cream
In a pan, heat sesame oil over medium heat. Add sliced shiitake mushrooms and sauté until soft. Pour in heavy cream and stir until mixed and creamy. Season with salt and pepper to taste.

Assembling the Bao
Once the pork belly is cooked, remove it from the pot and let it rest for a few minutes before slicing it into thin pieces. Steam the bao buns according to package instructions.

Final Assembly
In each bao bun, add a slice of pork belly, a spoonful of creamy shiitake mushroom, a drizzle of eel sauce, and a few pieces of pickled vegetables. Serve warm.
