Prepare the Broth
In a large pot, add the beef bones and cover them with water. Bring to a boil and let it boil for 10 minutes. This process helps to remove impurities.

Simmer the Broth
After 10 minutes, drain the water and rinse the bones under cold water. Return the bones to the pot, add 4 liters of fresh water, and bring to a simmer.

Strain the Broth
After simmering, strain the broth through a fine mesh sieve or cheesecloth into another pot, discarding the solids. Adjust seasoning with salt or additional fish sauce if needed.

Prepare the Toppings
Prepare your choice of proteins (such as thinly sliced beef, chicken, or tofu), and chop the onions, scallions, cilantro, culantro, and jalapeños. Arrange bean sprouts, lime wedges, and basil on a serving platter.

Serve
To serve, place cooked rice noodles in bowls, add your choice of proteins, ladle hot broth over, and garnish with the prepared toppings. Serve immediately.
