Method
Preparing Sashimi

Slice the Fish
Carefully slice the fresh salmon, tuna, yellowtail, snapper, and scallops into thin pieces. Each piece should be about 1/4 inch thick.
Preparing Sushi Rice

Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl. Mix the rice vinegar with a little sugar and salt, then fold it into the rice gently, ensuring not to crush the grains.
Forming Nigiri

Shape the Rice
Wet your hands with water, take a small handful of sushi rice and mold it into an oval shape.

Add Topping
Place a slice of salmon, tuna, or shrimp on top of each molded rice oval.
Preparing Miso Soup

Make the Soup
In a pot, bring the dashi stock to a boil. Add the miso paste and stir until dissolved. Serve warm.
Serving

Plate the Dish
Arrange the sashimi on a plate, place the nigiri next to it, and serve with miso soup, fresh wasabi, mixed salad greens, and soy sauce.
