Method
Prepare Sushi Rice

Rinse and Cook Rice
Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Pour over the rice and gently fold to combine. Allow to cool.
Prepare Miso Soup

Combine Ingredients
In a pot, bring water to a boil. Add miso paste and stir until dissolved. Add tofu, green onions, and soaked seaweed. Simmer for 5 minutes, then remove from heat.
Assemble Nigiri

Shape Sushi Rice
Wet your hands with water to prevent sticking. Take a small amount of sushi rice and shape it into an oval using your hands.

Add Fish
Place a slice of sushi-grade fish on top of the shaped rice. Optionally, add a small amount of fresh wasabi.
Serve

Plate and Enjoy
Serve the Moriwase Nigiri with miso soup, house salad, and imported soy sauce on the side.
