Instructions
- 1
Prepare the Sticky Rice
Rinse the sticky rice under cold water until the water runs clear. Soak the rinsed rice in water for at least 4 hours or overnight. Drain the rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 25-30 minutes until tender.
- 2
Make Coconut Sauce
In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring constantly until the sugar dissolves. Do not let it boil. Reserve a small portion of the coconut sauce for drizzling on top later.
- 3
Combine Rice and Coconut Sauce
Once the rice is done steaming, transfer it to a mixing bowl. Pour the majority of the coconut sauce over the rice and mix well. Let it sit for about 15 minutes to absorb the flavors.
- 4
Prepare the Mango
While the rice is soaking up the coconut sauce, peel the mangoes and slice them into thin wedges.
- 5
Serve
To serve, place a portion of the sticky rice on a plate, arrange mango slices on the side, and drizzle with the reserved coconut sauce. Sprinkle with sesame seeds or mung beans if desired.
