Brewing Process

    Mashing

    In a large pot, combine the pilsner malt and rice with 15 cups of water. Heat to 150°F (65°C) and hold for 60 minutes, stirring occasionally.

    Lautering

    After mashing, separate the liquid (wort) from the grain. You can do this by pouring the mixture through a strainer or using a lautering tun.

    Boiling

    Bring the wort to a boil. Add the hops and boil for 60 minutes. Skim off any foam that forms on the surface.

    Cooling

    Cool the wort quickly to fermentation temperature (about 50°F/10°C) using a wort chiller or an ice bath.

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Allow to ferment for 2-3 weeks at a cool temperature.

    Bottling

    Once fermentation is complete, siphon the beer into sanitized bottles, leaving some space at the top. Cap the bottles and allow to carbonate for another week.
