Directions
Prepare the Matcha Mixture
In a small bowl, whisk together the matcha green tea powder and a tablespoon of hot water until smooth. Set aside.
Heat the Cream and Milk
In a medium saucepan, combine the heavy cream, whole milk, and sugar over medium heat. Stir until the sugar is dissolved and the mixture is heated but not boiling.
Thicken the Base
Continue to cook the mixture over medium heat, stirring constantly until it thickens enough to coat the back of a spoon. Do not let it boil.
Combine and Chill
Remove the saucepan from heat. Stir in the matcha mixture, vanilla extract, and a pinch of salt. Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Freeze
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
Serve
Scoop the ice cream into bowls and enjoy your homemade Japanese green tea ice cream!
