Prepare the Wort
In a large pot, bring 20 cups of water to a boil. Add the Pilsner malt and rice, stirring to combine. Boil for 60 minutes.

After 30 minutes of boiling, add the Saaz hops to the pot. Continue boiling for another 30 minutes.

Cool and Ferment
After boiling, cool the wort quickly using a wort chiller or an ice bath. Once cooled, transfer to a fermentation vessel and add the lager yeast. Seal and ferment for 2 weeks at a cool temperature (around 50°F/10°C).

Add Yuzu Juice
After fermentation, gently stir in the yuzu juice and let it sit for 1 more week.

Bottle Conditioning
Prepare a sugar solution with 0.5 cups of priming sugar in 1 cup of water and boil for 5 minutes. Cool and mix into the beer. Bottle the beer and let it condition for 2-3 weeks.
