Prepare the Ingredients
Thinly slice the cucumber and chop the green onions. Mince the garlic cloves.

Fry the Garlic
In a small pan, heat a tablespoon of vegetable oil over medium heat. Add the minced garlic and fry until golden brown and crispy. Remove and set aside.

Sear the Hamachi
In the same pan, add another tablespoon of vegetable oil. Season the hamachi filets with salt and pepper. Sear the filets for 2-3 minutes on each side or until cooked to your liking.

Assemble the Dish
On a plate, place the seared hamachi. Top with kimchee, sliced cucumber, fried garlic, and drizzle with ponzu sauce.

Garnish and Serve
Sprinkle with chopped green onions and sesame seeds before serving.
