    Prepare the Hamachi

    Rinse the hamachi collar under cold water and pat dry with paper towels. Brush both sides with olive oil and season generously with salt and black pepper.

    Preheat the Grill

    Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

    Grill the Hamachi Collar

    Place the hamachi collar skin-side down on the grill. Grill for about 5-7 minutes until the skin is crispy. Flip and grill for an additional 3-5 minutes until cooked through and flaky.

    Prepare the Spicy Ponzu

    In a small bowl, combine 1/4 cup of ponzu sauce with 1 tsp of sriracha or your preferred hot sauce. Mix well.

    Serve

    Remove the hamachi from the grill and let it rest for a minute. Drizzle with spicy ponzu sauce and garnish with sliced green onions before serving.
