Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, chili pepper flakes, and onion powder. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture until evenly coated.

Heat the Oil
In a deep pan, heat the vegetable oil over medium-high heat until hot (about 350°F or 175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Garnish
Chop the scallions and finely mince the garlic cloves.

Toss the Calamari
In a large bowl, toss the fried calamari with chopped scallions and minced garlic. Add additional salt and chili pepper flakes to taste.

Serve
Serve the crispy calamari warm with sweet Thai chili sauce on the side.
