Prepare the Brussel Sprouts
Trim the stem ends of the Brussel sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

Cook the Garlic
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic cloves and fry until golden brown and fragrant. Remove from skillet and set aside.

Sauté the Brussel Sprouts
In the same skillet, add the remaining tablespoon of olive oil. Add the halved Brussel sprouts, salt, and black pepper. Sauté for about 8-10 minutes, stirring occasionally, until they are tender and nicely browned.

Make the Vinaigrette
In a small bowl, whisk together peach balsamic vinegar and honey until well combined.

Combine and Serve
Once the Brussel sprouts are done, drizzle the peach balsamic vinaigrette over them, sprinkle with fried garlic, and toss gently to combine. Serve warm.
