Prepare the Marinade
In a mixing bowl, combine honey, ground cinnamon, brown sugar, soy sauce, minced garlic, and grated ginger. Mix well until the sugar is dissolved.

Marinate the Pork
Place the pork belly in a large resealable bag or a deep dish. Pour the marinade over the pork and ensure it is fully coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Braise the Pork
Preheat the oven to 300°F (150°C). Transfer the marinated pork belly to a Dutch oven or a heavy pot. Add 2 cups of water to the pot. Cover with a lid and braise in the oven for 6 hours, until the pork is tender and the fat has rendered.

Prepare Wonton Skins
In a frying pan, heat oil over medium heat. Cut wonton skins into triangles and fry until golden brown and crispy. Remove and drain on paper towels.

Serve
Once the pork belly is done, remove it from the pot and let it rest for a few minutes. Slice into thick pieces and serve with the fried wonton skins on the side.
