Prepare the Spinach
In a skillet over medium heat, add the fresh spinach and minced garlic cloves. Sauté until the spinach is wilted and the garlic is fragrant, about 3-4 minutes. Remove from heat and let cool.

Mix the Filling
In a mixing bowl, combine the sautéed spinach and garlic with ricotta cheese, grated Parmesan cheese, salt, black pepper, and nutmeg. Mix well until fully combined.

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.

Rest the Dough
Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

Prepare the Sauce
In a saucepan over medium heat, melt the butter. Add minced garlic cloves and sauté for about 1 minute. Pour in the heavy cream and bring to a simmer.

Thicken the Sauce
Add the grated Parmesan cheese, salt, and black pepper to the cream mixture, stirring constantly until the cheese is melted and the sauce thickens, about 3-5 minutes.
Assembling and Cooking Ravioli

Roll Out the Dough
On a floured surface, divide the dough into quarters. Roll out one portion into a thin sheet (about 1/16 inch thick) using a rolling pin or pasta machine.

Shape the Ravioli
Place teaspoons of the filling mixture on one half of the dough sheet, spacing them about 2 inches apart. Fold the other half over the filling and press down around each mound to seal. Cut between the ravioli with a knife or a pasta cutter.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and let drain.

Serve with Sauce
Plate the cooked ravioli and drizzle with the Alfredo sauce. Garnish with additional grated Parmesan cheese if desired.
