Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Prepare the Pancetta

While the pasta is cooking, heat a large skillet over medium heat. Add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

  3. 3

    Mix Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine

  1. 4

    Combine Pasta and Pancetta

Once the spaghetti is cooked, reserve 1 cup of pasta water and drain the rest. Quickly add the hot pasta to the skillet with the pancetta and toss to combine.

  2. 5

    Add Egg Mixture

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to coat the spaghetti without scrambling the eggs.

  3. 6

    Adjust Sauce Consistency

If the sauce is too thick, gradually add reserved pasta water until you reach the desired creamy consistency.

Serve

  1. 7

    Plate the Dish

Serve the spaghetti carbonara immediately, garnishing with chopped fresh parsley and additional Parmesan cheese if desired.
