Method

Prepare the Pasta

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

  2. 2

    Reserve Pasta Water

Before draining, reserve about 1 cup of pasta cooking water. Drain the linguine and set aside.

Prepare the Clams

  1. 3

    Clean the Clams

Rinse the fresh clams under cold water to remove any sand or grit. Discard any clams that are open and do not close when tapped.

  2. 4

    Cook the Clams

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

  3. 5

    Add White Wine and Clams

Pour in the white wine, then add the cleaned clams to the skillet. Cover and cook for about 5-7 minutes or until the clams open. Discard any clams that do not open.

Combine and Serve

  1. 6

    Toss with Linguine

Once the clams are cooked, add the drained linguine to the skillet. Toss everything together, adding reserved pasta water as needed to create a light sauce.

  2. 7

    Finish the Dish

Squeeze the juice of one lemon over the pasta and clams. Stir in chopped parsley and season with salt to taste.

  3. 8

    Serve

Serve the linguine and clams hot, garnished with additional parsley and lemon wedges if desired.
