Base Preparation

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking constantly to prevent the yolks from cooking. Once combined, return the mixture to the saucepan.

    Cook the Mixture

    Cook the mixture over medium heat, stirring constantly with a wooden spoon until it thickens enough to coat the back of the spoon, about 5-7 minutes.

    Add Flavoring

    Remove from heat, stir in the vanilla extract and a pinch of salt. If you are making a flavored gelato, add the desired flavoring (like chocolate syrup, pureed strawberries, coffee grounds, or mint extract) at this point.

    Chill the Mixture

    Transfer the mixture to a bowl, cover, and refrigerate until completely chilled, at least 4 hours or overnight.

Churning and Freezing

    Churn the Gelato

    Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the churned gelato to a lidded container and freeze for at least 2 hours to firm up before serving.

    Scoop the gelato into bowls or cones and enjoy! Optionally, garnish with fresh fruits, chocolate shavings, or a drizzle of syrup.
