Pasta Preparation

    Cook the Fettuccine

    Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, typically about 8-10 minutes. Drain and set aside, reserving a small cup of pasta water.

Asparagus and Sauce Preparation

    Sauté the Asparagus

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the asparagus pieces and sauté for 5-7 minutes until they are tender but still crisp.

    Pour in the sherry wine and let it simmer for 2-3 minutes, allowing the alcohol to cook off and the flavors to meld.

    Create the Cream Sauce

    Reduce the heat to low and stir in the heavy cream. Cook for an additional 2 minutes until the sauce thickens slightly. Add the grated Parmesan cheese, salt, and black pepper, stirring until the cheese is melted and well combined.

    Add the cooked fettuccine to the skillet with the asparagus and sauce. If the sauce is too thick, add a little reserved pasta water to achieve desired consistency. Gently toss to combine and heat through for 1-2 minutes.
