    Make the Dough

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, and salt until well combined. Add the softened butter and mix until crumbly.

    Combine Wet Ingredients

    In a separate bowl, whisk together the egg yolk, white wine (or vinegar), and water until smooth. Gradually add this mixture to the dry ingredients, mixing until a dough forms.

    Knead and Rest

    Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 1 hour at room temperature.

    Roll and Cut Shells

    After resting, divide the dough into quarters. Roll out one quarter of the dough as thin as possible, about 1/8 inch thick. Cut into circles using a round cutter (about 4 inches in diameter).

    Fry Shells

    Wrap the dough circles around metal cannoli tubes, sealing the edges with a little water. Heat vegetable oil in a deep pot to 375°F (190°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    In a mixing bowl, combine the ricotta cheese, powdered sugar, cocoa powder, chocolate chips, and vanilla extract. Mix until smooth and well-combined.

    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the ricotta mixture until fully incorporated.

    Fill the Shells

    Once the cannoli shells are completely cooled, carefully remove them from the tubes. Use a pastry bag or a spoon to fill the shells with the chocolate filling.
