Bake the Tater Tots
Preheat your oven to 425°F (220°C). Spread the frozen tater tots on a large baking sheet in a single layer. Bake for 25–30 minutes or until golden brown and crispy, flipping halfway through for even browning.
Seasoned Ground Beef

Cook the Beef
In a skillet over medium heat, cook the ground beef until fully browned, about 6–8 minutes. Drain excess fat if necessary.

Season the Beef
Add chili powder, cumin, garlic powder, onion powder, paprika, salt, black pepper, and 1/4 cup water to the beef. Stir well to combine and simmer for 3–4 minutes until the water is mostly absorbed and the beef is well seasoned.
Refried Beans

Warm the Beans
In a small saucepan, warm the refried beans over low heat, stirring occasionally, until heated through. Add a splash of water if needed to loosen the texture.
Cheese & Queso

Prepare the Cheeses
Shred the cheddar and Monterey Jack cheeses and set aside.

Warm the Queso
If using pre-made house queso, heat it in a small saucepan over low heat or microwave in 30-second intervals, stirring frequently, until smooth and pourable.
Pico de Gallo

Mix the Pico de Gallo
In a bowl, combine diced tomatoes, red onion, chopped cilantro, jalapeño, lime juice, and salt. Mix well and set aside to let flavors meld.
Assembly and Toppings

Assemble the Nachos
On a large oven-safe platter or baking sheet, layer the crispy tater tots as the base. Evenly spoon warmed refried beans and seasoned ground beef over the tots.

Add Cheese
Sprinkle shredded cheddar and Monterey Jack cheeses over the beef and beans. Return to the oven for 5–7 minutes or until cheese is melted.

Drizzle Queso
Remove from oven and drizzle warm queso generously over the top.

Top the nachos with pico de gallo, pickled jalapeños, dollops of sour cream, and guacamole. Serve immediately.
