Cheese Sauce
Add milk and thicken
Gradually whisk in the milk to the roux, continuing to stir until the mixture thickens, about 3-5 minutes.
Incorporate cheeses and season
Once thickened, lower the heat and stir in the shredded cheddar and queso blanco until fully melted and smooth. Season with salt and pepper to taste. Keep warm on low heat until ready to use.
Nacho Assembly
Preheat oven
Preheat your oven to 375°F (190°C).
Layer the chips and cheeses
Spread the tortilla chips evenly on a large baking sheet or oven-safe platter. Sprinkle the shredded cheddar and jack cheese evenly over the chips.
Bake the chips
Place the chips in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
Add toppings
Remove the nachos from the oven. Drizzle the warm cheese sauce generously over the chips. Top with sliced jalapeños, diced tomatoes, dollops of sour cream, and sliced scallions.
