Frites (French fries)

Prepare potatoes

Cut russet potatoes into 1/4 to 1/3-inch sticks. Rinse thoroughly in cold water until water runs clear to remove excess starch, then pat completely dry with a kitchen towel or paper towels.

Par-fry (optional for extra-crisp)

Heat 1 to 1 1/2 inches of oil in a deep skillet or Dutch oven to 325°F (about medium). Fry potato sticks in batches for 3–4 minutes until soft but not browned. Remove and drain on paper towels. Let cool while you prepare the sauce (or refrigerate briefly).

Final fry

Increase oil temperature to 375°F (high). Fry potatoes in batches until golden and crisp, about 2–3 minutes. Drain on paper towels and immediately season with fine sea salt and a little freshly ground black pepper.

Clean mussels

Rinse mussels under cold water, discard any with cracked shells or that do not close when tapped. Remove beards by pulling toward the hinge of the shell.

Sauté aromatics

In a large, wide pot or deep skillet with a tight-fitting lid, heat 1 tablespoon vegetable oil over medium heat. Add finely chopped shallot and cook 2–3 minutes until softened. Add minced garlic and grated ginger and cook 30–45 seconds until fragrant, taking care not to brown.

Build curry base

Stir in 2 tablespoons red curry paste and the lemongrass; cook 1 minute to bloom the spices. Add fish sauce and brown sugar and stir to combine. Pour in the coconut milk and 1 cup stock, scraping any browned bits from the pan. Bring the mixture to a gentle simmer.

Steam mussels

Increase heat to medium-high. Add the cleaned mussels to the simmering curry, cover with a lid, and steam for 4–6 minutes, shaking the pot once or twice, until most mussels have opened. Discard any mussels that remain closed after cooking.

Finish sauce

Remove the pot from heat. Stir in 1 tablespoon fresh lime juice and torn basil (if using). Taste the sauce and adjust with salt, additional fish sauce, or lime juice as desired. Add chopped cilantro and a grind of black pepper.

Assembly & Serve

Divide the hot frites between serving plates or a shallow bowl, creating a nest for the mussels.

Using a slotted spoon or tongs, transfer mussels and several spoonfuls of the red curry broth over the frites. Ensure some broth soaks the fries but avoid drowning them—about 1/3 to 1/2 cup sauce per serving.

Garnish each plate with additional cilantro leaves, a lime wedge, and optional sliced red chilies or chili flakes for heat. Serve immediately so the fries remain crisp where not fully saturated by the sauce.

Provide extra lime wedges and a small bowl for empty shells at the table.
