Noodles & Prep

Soak noodles

Place the dried rice noodles in a large bowl. Cover with very hot (not boiling) water and soak for 6–8 minutes until pliable but still slightly firm (they will finish cooking in the wok). Drain and toss with 1 teaspoon neutral oil to prevent sticking. Set aside.

Prepare protein

If using chicken or beef: thinly slice across the grain into bite-sized strips and season lightly with 1/4 tsp salt and 1/4 tsp pepper. If using shrimp: peel and devein; pat dry. If using firm tofu: press to remove excess water, cut into 3/4-inch cubes, and toss lightly with 1/4 tsp salt.

Sauce

Whisk together the soy sauce, oyster sauce, fish sauce, lime juice, brown sugar, chili garlic sauce, toasted sesame oil, and ground pepper in a bowl. Taste and adjust: add a little more sugar if too salty, or 1/2 tsp water if too concentrated. Set sauce aside.

Vegetables

Prepare vegetables so they are ready to add quickly: thinly slice bell peppers and onion, julienne carrot, separate broccoli into small florets, slice chilies and green onions, and pick basil leaves from stems.

Stir-Fry

Heat wok and cook protein

Place a large wok or heavy skillet over high heat until very hot. Add 1 tablespoon neutral oil and swirl. Add protein in a single layer (work in batches if necessary). For chicken or beef: stir-fry 2–3 minutes until browned and nearly cooked through. For shrimp: cook 1–2 minutes per side until opaque. For tofu: sear without moving too much until golden on at least two sides, about 3–4 minutes. Transfer protein to a plate and set aside.

Scramble eggs

Add another 1 tablespoon oil to the wok. Reduce heat to medium-high. Crack the eggs into the wok, scramble briefly until slightly set but still soft, then push to the side or transfer to the protein plate.

Stir-fry vegetables

Add the remaining 1 tablespoon oil to the wok. Add onions, carrots, and broccoli first; stir-fry 2–3 minutes until broccoli bright green and starting to tenderize. Add bell peppers and sliced chiles; stir-fry another 1–2 minutes so peppers stay slightly crisp.

Combine noodles, protein, and sauce

Add the soaked rice noodles to the wok, spreading them so they contact the hot surface. Pour the prepared sauce evenly over the noodles. Return the cooked protein and scrambled eggs to the wok. Using tongs or two spatulas, toss everything together vigorously for 1–2 minutes so noodles heat through, absorb sauce, and ingredients combine. If the noodles stick or look dry, add 1–2 tablespoons water and continue tossing.

Finish with herbs

Turn off the heat, add Thai basil leaves and most of the green onions, and toss once more until basil wilts but remains fragrant. Taste and adjust seasoning with an extra 1/2 tsp soy or a squeeze of lime if needed.

To Serve

Divide spicy noodles among plates. Garnish with remaining green onions, cilantro, crushed peanuts, and lime wedges. Serve immediately while hot.
