Prepare and Marinate Pork
Trim excess fat from the pork and slice into thin cutlets about 1/8–1/4 inch thick. Place the pork in a bowl. Add minced garlic (4 tbsp), soy sauce (2 tbsp), fish sauce (1 tbsp), brown sugar (1 tbsp), white pepper (1/2 tsp) and 1 tablespoon of vegetable oil. Toss to coat evenly. Cover and refrigerate for at least 30 minutes and up to 2 hours to let the garlic flavor infuse.
Set up Breading Station
Place flour (1/2 cup) in a shallow dish and season with 1/2 tsp salt. In a second shallow bowl, beat the 2 eggs lightly. In a third shallow bowl, spread panko breadcrumbs (2 cups). Pat marinated pork dry lightly with paper towel to remove excess marinade (this helps breading adhere).
Bread the Pork
Working in batches, dredge each pork slice first in the flour, shaking off excess, then dip in the beaten eggs, letting excess drip off, and finally press into the panko breadcrumbs so the surface is well coated. Place breaded cutlets on a wire rack or tray while you finish the rest.
Fry the Pork
Pour 1.5 to 2 cups of vegetable oil into a large skillet to reach ~1/4 inch depth (or heat enough oil in a deep pan for shallow-frying). Heat over medium-high until oil registers about 350°F (175°C) or a small piece of bread sizzles and browns in about 30–40 seconds. Fry pork cutlets in batches, 2–3 minutes per side, until golden brown and internal temperature reaches 145°F (63°C). Adjust heat as needed to avoid burning the panko. Transfer fried pork to a paper towel–lined plate to drain and keep warm in a low oven (200°F / 95°C) if desired.
Sautéed Vegetables (Bed)
While the pork marinates (or during final frying), prepare the vegetable bed. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced garlic (1 tbsp) and sauté 20–30 seconds until fragrant but not browned.
Add the sliced cabbage (3 cups) and stir-fry 2–3 minutes until it begins to soften. Add the julienned carrot (1/2 cup) and continue to stir-fry 1–2 minutes.
Add the bean sprouts (1 cup) and green onions (4 units). Toss together and season with 1 tsp soy sauce, 1 tsp oyster sauce (optional), 1/4 tsp salt and 1/4 tsp freshly ground black pepper. Stir-fry 1–2 minutes more—vegetables should be tender-crisp.
Finish by drizzling 1/2 tsp sesame oil over the vegetables, give a final toss, then transfer the vegetable mixture to a serving platter or individual plates, creating a bed for the pork.
Garnish & Dipping Sauce
Arrange the fried garlic pork on top of the warm sautéed vegetable bed. Garnish with cilantro leaves if using and serve with lime wedges and sweet chili sauce or your preferred Thai dipping sauce on the side.
To serve: squeeze lime over the pork just before eating and dip pieces into the sweet chili sauce. Enjoy immediately so the pork stays crisp.
