Gnocchi
Wild Leek Sauce
Seaweed and Smoked Mussel Topping
Method
Preparing the Gnocchi
Shape the Gnocchi
Fill a large pot with salted water and bring it to a gentle boil. Using a spoon or pastry bag, drop small amounts of the dough into the boiling water. Cook until the gnocchi float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Making the Wild Leek Sauce
Sauté the Wild Leeks
In a medium saucepan, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the chopped wild leeks and cook until softened, about 3 minutes.
Add Cream
Pour in the heavy cream and simmer for 5-7 minutes, allowing the sauce to thicken. Season with salt and black pepper to taste.
