Preparation of Calamari

Clean and Slice Calamari
Rinse the calamari tubes under cold water. Slice them into rings, about 1/2 inch thick.

Marinate Calamari
Place the sliced calamari in a bowl and pour the buttermilk over them. Let them marinate for at least 30 minutes in the refrigerator.
Dipping Sauce Preparation

Mix Dipping Sauce
In a small bowl, combine mayonnaise, ketchup, lemon juice, hot sauce, and garlic powder. Mix well until smooth. Refrigerate until ready to serve.
Frying Calamari

Prepare the Frying Mixture
In a separate bowl, mix the flour, cornstarch, salt, black pepper, and paprika.

Coat Calamari
Remove the calamari from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
