Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold unsalted butter and mix until the mixture resembles coarse crumbs.

Add the egg yolk and ice water to the mixture. Stir until the dough comes together. Avoid overmixing.

Chill the Dough
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare Foie Gras
In a food processor, blend the foie gras until smooth. Add the heavy cream, cognac, salt, black pepper, and fresh thyme. Blend until well combined and smooth.

Pour the foie gras mixture into the cooled tart crust, smoothing the top with a spatula.
