Preparation of Foie Gras
Preparing the Foie Gras
Remove the foie gras from the refrigerator and let it sit at room temperature for about 30 minutes to soften. Trim any veins or imperfections from the foie gras with a sharp knife.
Seasoning
Sprinkle the foie gras evenly with salt and black pepper on both sides.
Preparation of Cherry and Black Apple Compote
Cooking the Cherries
In the same skillet used for the foie gras, add the pitted cherries and cook for 3-4 minutes until they start to soften. Add balsamic vinegar and stir to combine.
Preparing Black Apples
While the cherries are cooking, core and slice the black apples into thin wedges. Once the cherries have cooked, add the apple slices to the skillet and cook for an additional 2-3 minutes until they are tender.
Combining Flavors
Stir the mixture gently to combine the flavors of the cherries and apples. Remove from heat and allow to cool slightly.
Plating
Assembling the Dish
On a serving plate, place a generous spoonful of the cherry and black apple compote. Lay the seared foie gras over the compote.
Garnishing
Garnish with fresh mint leaves and edible flowers for an elegant presentation.
