Crust Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, and salt. Whisk until well mixed.

Incorporate the Butter
Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Form the Dough
Gradually add cold water, one tablespoon at a time, mixing until the dough just comes together. Do not overwork the dough.

Chill the Dough
Shape the dough into a flat disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
Filling Preparation

Melt the Chocolate
In a heatproof bowl over a pot of simmering water, melt the chopped dark chocolate and heavy cream together, stirring until smooth. Remove from heat and let cool slightly.

Mix the Filling
In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt until well combined. Gradually stir in the melted chocolate mixture and sea buckthorn puree until smooth.
Assembling and Baking

Preheat and Roll Out
Preheat the oven to 350°F (175°C). On a floured surface, roll out the chilled dough to fit your tart pan. Transfer the dough to the pan and trim the edges.

Blind Bake the Crust
Prick the bottom of the crust with a fork, then line it with parchment paper and fill with pie weights. Bake in the preheated oven for 15 minutes. Remove the weights and parchment, and bake for an additional 10 minutes until set.

Fill the Tart
Pour the sea buckthorn and chocolate filling into the baked tart shell, smoothing the top with a spatula.

Bake the Tart
Return the filled tart to the oven and bake for 20-25 minutes, or until the filling is set but still slightly jiggly in the center.

Cool and Serve
Allow the tart to cool completely at room temperature before slicing. Serve chilled or at room temperature, garnished with fresh sea buckthorn berries if desired.
