Preparing the Beef Tenderloin

    Prepping the Tenderloin

    Take the beef tenderloin out of the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook evenly.

    Seasoning the Beef

    Rub the entire surface of the beef tenderloin with 2 tablespoons of olive oil. Season generously with salt and black pepper. Mince the garlic and chop the fresh rosemary, then rub them into the meat for added flavor.

    Searing the Tenderloin

    Preheat a large skillet or cast-iron pan over medium-high heat. Once hot, add the seasoned beef tenderloin. Sear the meat on all sides until browned, about 3-4 minutes per side.

    Roasting the Tenderloin

    After searing, transfer the skillet to a preheated oven at 400°F (200°C) and roast for 20-25 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Resting the Beef

    Remove the beef from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

    Prepping the Vegetables

    While the beef is resting, prepare the seasonal vegetables. Peel and slice the carrots, and trim the asparagus. Cut the bell peppers into strips.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the carrots and sauté for 5 minutes. Then add the asparagus and bell peppers. Season with salt and black pepper, stirring occasionally, until the vegetables are tender, about 5-7 minutes.

    Once the vegetables are tender and the beef has rested, slice the beef tenderloin against the grain and serve it alongside the sautéed seasonal vegetables.
