Method
Egg Yolk Preparation
Prepare the Egg Yolks
Carefully separate the egg yolks from the whites and place them in a small bowl. Add the smoked sea salt and liquid smoke to the yolks, mixing gently until well combined.
Cure the Yolks
Transfer the yolk mixture into a shallow dish and cover with plastic wrap. Refrigerate for at least 24 hours to cure and develop the smoky flavor.
Wild Sea Flora Preparation
Prepare the Sea Flora
In a small bowl, mix the dulse flakes and chopped kombu seaweed. Tear the nori sheet into small pieces and add to the mixture. Set aside for later use.
Sea Mustard Mixture Preparation
Make the Sea Mustard Dressing
In a mixing bowl, combine the sea mustard, olive oil, lemon juice, and black pepper. Stir well until the mixture is smooth and well integrated.
Assembly
Assemble the Acadian Caviar
Once the egg yolks are cured, carefully remove them from the dish. Use a small spoon to scoop the yolks onto a serving platter. Drizzle the sea mustard mixture over the yolks and sprinkle the prepared wild sea flora on top for garnish.
Serve
Serve immediately as an appetizer or part of a tasting menu, allowing guests to enjoy the unique flavors of the Acadian Caviar.
