Method

Lemon-Basil Sorbet

    In a small saucepan, combine Water and Granulated sugar and bring to a gentle simmer until the sugar completely dissolves, forming a light simple syrup.

    Remove from heat and let the syrup cool to room temperature.

    Whisk in Fresh lemon juice and Lemon zest to the syrup.

    Add Fresh basil leaves to the mixture and allow to steep for 10–15 minutes, then strain out the basil leaves.

    Chill the lemon-basil base completely in the refrigerator (at least 2 hours, ideally overnight).

    Churn the chilled base in an ice cream maker according to the manufacturer’s instructions. Transfer to a lidded container and freeze until firm.

Raspberry Sorbet

    In a saucepan, combine Water and Granulated sugar and heat until the sugar dissolves to form a sugar syrup. Cool completely.

    Stir in Raspberry purée and Fresh lemon juice. Taste and adjust sweetness if needed.

    Chill the mixture until cold (at least 2 hours). If desired, strain through a fine-mesh sieve for a smoother texture.

    Churn in an ice cream maker until firm, then transfer to a container and freeze.

Mango Sorbet

    In a saucepan, gently simmer Water and Granulated sugar until the sugar dissolves to form a simple syrup. Cool completely.

    Whisk in Mango purée and Fresh lime juice until smooth.

    Chill the mango base until very cold (2 hours or longer).

    Churn in an ice cream maker until light and smooth, then freeze until ready to serve.
