    Preheat and prepare baking sheet

    Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare zucchini slices

    Wash the zucchini and cut into 1/4-inch-thick rounds (about 2 inches in diameter). Pat dry. Lightly salt the rounds and set aside.

    Sauté garlic and spinach

    In a skillet, heat 2 tablespoons olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Add spinach and cook until wilted, 1-2 minutes. Season with a pinch of salt and pepper.

    Make spinach-cheese filling

    In a medium bowl, whisk together ricotta, Parmesan, half of the mozzarella, salt, pepper, and nutmeg. Fold in the wilted spinach until evenly combined.

    Assemble bites

    Place zucchini rounds on the prepared sheet. Top each with a generous spoonful of the spinach-cheese filling. Sprinkle with the remaining mozzarella.

    Bake for 12-15 minutes, or until zucchini are tender and cheese is bubbly and slightly browned. Optional: broil 1-2 minutes for a golden top. Remove from oven and allow to cool briefly before serving.
