Vanilla Ice Cream Base

    In a medium saucepan, whisk together 2 cups of milk, 0.75 cup of sugar, and 0.25 teaspoon salt. Heat over medium heat until warm and the sugar begins to dissolve, stirring occasionally.

    Slowly whisk in 2 cups of heavy cream. Continue to heat just until the mixture is hot but not boiling.

    Remove from heat and stir in 1 tablespoon vanilla extract. Allow to cool slightly, then refrigerate until completely chilled (about 4 hours or overnight).

Chocolate Flavor Adaptation

    In a small bowl, whisk the cocoa powder with 2 tablespoons hot water to form a smooth paste.

    Stir the cocoa paste into the chilled vanilla base until the mixture is evenly colored. If you prefer sweeter chocolate, whisk in the optional 2 tablespoons additional sugar, then return the base to the refrigerator to chill for another hour.

    Cover and chill the base until completely cold for best churning results.

Churning and Freezing

    Churn the base in your ice cream maker according to the manufacturer’s instructions until thick and softly scoopable.
