1. Warm the milk and flavorings
In a medium saucepan, gently warm 2 cups of milk with 1/2 cup granulated sugar, lemon zest, and 1 teaspoon vanilla. Heat just until steaming; do not boil.
2. Prepare yolks and cornstarch
In a bowl, whisk 4 egg yolks with 2 tablespoons cornstarch until smooth and pale.
3. Temper and combine
Slowly whisk a ladle of the hot milk into the yolks to temper, then pour the yolk mixture back into the saucepan with the remaining milk. Continue to cook over medium heat, whisking constantly.
4. Thicken custard
Cook until the custard thickens enough to coat the back of a spoon. Do not let it boil.
5. Chill custard
Strain through a fine-mesh sieve into a clean bowl. Let cool to room temperature, then refrigerate 2–3 hours until completely chilled.
6. Whip cream and fold
Whip 1 cup heavy cream with 2 tablespoons powdered sugar to soft peaks. Gently fold the whipped cream into the cooled custard until light and uniform.
7. Serve
Spoon the diplomat cream into serving cups. Chill 1–2 hours more if desired. Garnish with fresh berries if using.
