    Prepare crust

    Preheat oven to 350°F (175°C). In a bowl, combine crushed biscuits or graham crackers, granulated sugar, and salt. Stir in the melted butter until the crumbs are evenly moistened.

    Press the crumb mixture into the bottom and slightly up the sides of a 9-inch (23 cm) springform pan to form a firm crust.

    Bake crust

    Bake crust for 8-10 minutes until set and fragrant. Remove from oven and let cool completely.

Chocolate Mousse

    Melt chocolate

    Place chopped dark chocolate in a heatproof bowl and melt slowly over a double boiler or in short bursts in the microwave, stirring until smooth. Allow to cool slightly.

    Whip cream

    In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

    Fold mousse

    Gently fold the cooled chocolate into the whipped cream until just combined and glossy.

    Spread the chocolate mousse evenly over the cooled crust, smoothing the surface.

    Refrigerate the cake for at least 2 hours, or until the mousse is set.

Ganache Glaze

    Make ganache

    Place chopped ganache chocolate in a heatproof bowl. Heat the heavy cream just to a simmer and pour over the chocolate. Let stand 1-2 minutes, then whisk until smooth and glossy.

    Glaze cake

    Pour the ganache over the chilled mousse layer, tilting the pan to cover the top and let it flow down the sides for an even coat.

    Return the cake to the refrigerator and let the glaze set for about 30-60 minutes.
