    Prep and preheat

    Preheat the oven to 350°F (175°C). Generously butter a 9x13-inch baking dish with melted butter (2 tablespoons) and set aside.

    Bread preparation

    Place brioche bread cubes (6 cups) in a large mixing bowl. If the bread is very fresh, toast lightly for 5 minutes to dry slightly, then drizzle with the melted butter and toss to coat evenly.

    Make custard

    In a separate bowl, whisk together eggs (4), whole milk (2 cups), heavy cream (1.5 cups), granulated sugar (0.75 cup), vanilla extract (2 tsp), ground cinnamon (2 tsp), ground nutmeg (0.5 tsp), and salt (0.25 tsp) until well combined.

    Combine and soak

    Pour the custard mixture over the bread cubes. Gently press and toss to ensure all bread is saturated. Let soak for 15–30 minutes, turning once halfway to evenly absorb the custard. If using raisins, fold them in after soaking.

    Transfer the soaked bread mixture to the prepared dish. Cover with foil and bake in the preheated oven for 45–55 minutes. Uncover and bake an additional 12–18 minutes, until the pudding is set in the center and the top is golden.

    Let the pudding rest for 10 minutes before serving. Slice into portions and serve warm, optionally with a dollop of whipped cream or vanilla sauce.
