    In a large bowl, whisk together the all-purpose flour, salt, and granulated sugar; add cold, cubed unsalted butter and use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.

    Gradually add ice water, 1 tablespoon at a time, mixing with a fork until the dough just comes together in rough clumps; you should be able to press it into a ball.

    Divide the dough into two equal portions, wrap each in plastic, and refrigerate for at least 30 minutes.

    Preheat the oven to 425°F (220°C).

    On a lightly floured surface, roll out one disc of dough into a 12-inch circle and fit into a 9-inch pie dish, trimming any excess around the edges.

    In a separate large bowl, combine the apple slices with lemon juice, 1/2 cup granulated sugar for filling, ground cinnamon, ground nutmeg, and vanilla extract; toss to coat evenly.
