Preparation and Cooking
1. Prepare the Battering Mixture
In a large bowl, mix the all-purpose flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the eggs and milk.
2. Coat the Walleye
Dip each walleye fillet into the egg mixture, allowing any excess to drip off, then coat it in the flour mixture. Ensure the fillets are evenly coated.
3. Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.
4. Fry the Walleye
Carefully place the coated walleye fillets into the hot oil. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove the fillets and drain on paper towels.
5. Prepare the Serving
Wash and dry the lettuce leaves, then place them on a serving platter. Arrange the fried walleye on top and serve with tartar sauce on the side.
