Prepare the Potatoes
Preheat your oven to 400°F (200°C). Toss the cubed potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, or until golden and crispy.

Prepare the Branzino
While the potatoes are roasting, clean the branzino and make 3-4 diagonal slashes on each side of the fish. Season generously with salt and pepper, and stuff the cavity with lemon slices and fresh parsley.

Roast the Branzino
In a large oven-safe skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Once hot, carefully place the branzino in the skillet and sear for 3-4 minutes on each side. Then, transfer the skillet to the oven and roast for an additional 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

Prepare the Scampi Butter
In a small saucepan, melt the scampi butter over low heat and stir in the capers. Keep warm until ready to serve.

In a large bowl, toss together the mixed greens, cherry tomatoes, red onion, balsamic vinegar, salt, and pepper to taste.
